    Yellowfin Tuna

    About

Thunnus albacares, commonly known as yellowfin tuna, is a species highly valued in international cuisine due to its juicy, tender meat and mild flavor with a subtle oceanic touch. This fish stands out visually with its yellow dorsal and lateral fins, from which its name derives, and its sleek, robust body, ideal for long migrations in tropical and temperate waters.

In culinary use, its firm texture and versatility make it highly prized. Yellowfin tuna is especially known for its use in raw dishes such as sashimi and sushi, thanks to its lean and delicate meat. It is also a popular choice for tartares and poké bowls, pairing well with citrus seasonings, soy sauce, and sesame. When cooked, yellowfin tuna can be quickly seared, keeping the interior rare (as in the classic tataki) or grilled for main dishes, often accompanied by sauces made with soy, garlic, or herb butter.
