Chloroscombrus chrysurus, commonly known as Atlantic Bumper, is a marine fish from the Carangidae family, found in tropical and subtropical waters of the Western Atlantic. With a laterally compressed body, silvery coloration, and yellowish reflections, it is a species frequently caught in both commercial and artisanal fishing.
The meat of the Atlantic Bumper is white, tender, and mild in flavor, with a slightly salty touch typical of coastal fish. Due to its small size, it is often consumed whole, either fried, baked, or grilled. One of the most common preparations is frying, which makes the skin crispy while keeping the meat juicy, usually served with rice and fish sauce.
It is also used in stews and fish chowders, where it absorbs seasonings well, such as garlic, onions, tomatoes, and cilantro.
