Oligoplites spp., commonly known as leather jacket or "xaréu-cachorro," is a genus of marine fish belonging to the Carangidae family. With an elongated, silvery body, a hydrodynamic appearance, and strong fins, these fish are primarily found in tropical and subtropical coastal waters, especially in the Western Atlantic.
Its meat is white, firm in texture, and has a bold, slightly oily flavor, making it ideal for rustic and flavorful preparations. Although less known than other commercial species, leather jacket fish is appreciated by local fishermen and can be prepared in various ways. Frying or grilling is one of the most common methods of consumption, enhancing its intense flavor and creating a golden, crispy crust.
It can also be used in seafood stews, such as fish chowders, as it absorbs strong seasonings made with bell peppers, onions, tomatoes, and fresh herbs. In the Caribbean and along the Brazilian coast, it is often found in simple recipes like baked fish with lemon, garlic, and cilantro.
