    About

    Caranx latus, commonly known as the horse-eye jack, is a large marine fish species found in tropical and subtropical waters of the Atlantic. With a robust, silvery body and bright lateral reflections, it is known for its strength, making it highly valued in sport fishing and coastal cuisine.

    Its meat is white, firm, and slightly bold with a mildly oily texture, making it ideal for rustic and well-seasoned dishes. One of the most common preparations is grilled or baked, where it is seasoned with lemon, garlic, olive oil, and fresh herbs like cilantro and parsley. Grilling enhances its natural flavor and forms a golden crust on the outside.

    It can also be fried in thick steaks, resulting in a crispy crust and a juicy interior. In traditional seafood stews, such as moquecas and chowders, horse-eye jack absorbs bold seasonings made with coconut milk, tomatoes, bell peppers, and spices. Due to its fat content, it is an excellent choice for escabeche recipes or vinegar-based marinades with herbs.
