Micropogonias furnieri, commonly known as yellow croaker or whitemouth croaker, is a demersal fish widely found in the coastal regions of South America, especially in Brazil, Uruguay, and Argentina. With an elongated, silvery body, metallic reflections, and a well-defined lateral line, it is a species extensively harvested by both artisanal and industrial fisheries.
Corvina’s meat is white, tender, and mildly sweet, with a delicate flavor that appeals to a wide range of palates. Its soft texture and versatility make it a highly appreciated choice in cooking. In Brazil, it is commonly fried in steaks, forming a golden and crispy crust, or baked in the oven with herbs, garlic, and lemon to enhance its natural freshness. It is also a classic ingredient in moquecas and seafood stews, where it absorbs the rich flavors of bell peppers, tomatoes, and spices.
